- Stir the flour into the melted butter over medium heat, cook 2-3 minutes, then gradually whisk in the stock until smooth and let it thicken as it heats.
- Boil the peeled, diced sweet potatoes 20-30 minutes until tender, drain, mash, then mix in butter, cream and maple syrup.
- Spread the sweet potato mixture in a baking dish, top with marshmallows and bake at 375°F for 20-30 minutes until the marshmallows are toasty.
- Mix the crushed graham crackers with melted butter until it looks like wet sand, then press into the bottom of a springform pan to form a crust.
- Mix the cream cheese, pumpkin filling, sour cream, maple syrup and eggs in a bowl, adjusting to the desired consistency, then pour over the crust.
- Bake the cheesecake at 375°F for 45 minutes to 1 hour.
- Whisk the cornbread mix, drained spinach, egg, milk and cheddar together, season with salt and pepper, pour into a greased muffin pan and bake at 375°F for about 30 minutes until cooked through.
- Cut the sliced apple, quartered orange (skin included) and squeeze the juice of the remaining half into a food processor with the raspberries, sugar, a splash of apple cider and a small pinch of salt, then blend.
- Mix the apple cider, apple cider vinegar and chicken stock in a spray bottle to make basting spray.
- Butterfly and flatten the boneless turkey, spread it with 3 tbsp butter, layer sage, rosemary and parsley on the inside, roll tightly and tie with twine, then season all over with salt and pepper.
- Spray the turkey with basting spray and sear it in a greased, heated pan until it develops color, then move it to a 375°F oven for an extra 20-30 minutes until cooked through.
- Tear or cube the stale bread and toast it in a 375°F oven for about 10 minutes until crunchy.
- Crumble the sausage into a lightly greased pan and cook until it has rendered down, then add the celery, mushrooms and pepper and soften them.
- Toss the sausage and vegetables with the bread cubes in a baking pan, add parsley and thyme, pour in the chicken stock, mix gently, spray with basting spray and bake at 375°F for about 20 minutes.
