Cookies and Cream Cupcakes
Ingredients
- Flour1
- Baking powder¾ tsp
- Baking soda¼ tsp
- Salt¼ tsp
- Butter · softened1 ½ cups
- Sugar1 cup + 1 + 1
- Egg3
- Vanilla4 tsp
- Sour cream½ cups
- Milk½ cups
- Oreo · chopped, crushed, for garnish1
- Heavy cream4 tbsp
- Cocoa powder¼ cups
Instructions
- Preheat the oven to 350°F (177°C). Line a 12-cup muffin pan with liners, and line a second pan (or plan to bake in batches) with 4 or 5 liners; the batter makes about 16–17 cupcakes.
- Whisk the cake flour, baking powder, baking soda and salt together.
- Beat the butter and sugar on medium-high speed for about 3 minutes until creamed. Scrape the bowl as needed, add the egg whites and beat on high for about 2 minutes until smooth. Add the sour cream and vanilla and beat on medium-high for about 1 minute.
- On low speed, add the dry ingredients, then slowly pour in the milk and mix just until combined. Whisk by hand if needed to remove lumps from the bottom of the bowl; the batter will be slightly thick. Fold in the chopped Oreos.
- Fill the liners only 2/3 full.
- Bake for 19–22 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan on a rack for 20 minutes, then remove and cool completely on the rack before frosting.
- For the vanilla frosting, beat the butter on medium speed for about 2 minutes. Add the confectioners' sugar, heavy cream and vanilla; beat on low for 30 seconds, then on medium-high for 2 minutes. If too thin, add 1/4 cup more confectioners' sugar; if too thick, add 1 Tablespoon more cream. Add a pinch of salt if too sweet. Move to another bowl.
- For the chocolate frosting, in the same bowl, beat the butter on medium speed for about 2 minutes. Add the confectioners' sugar, cocoa powder, heavy cream and vanilla; beat on low for 30 seconds, then on high for 1 minute. If too thin, add 1/4 cup more confectioners' sugar or cocoa powder; if too thick, add 1 Tablespoon more cream. Add a pinch of salt if too sweet.
- Spread or pipe the frostings onto the cooled cupcakes. To swirl both, fill one side of a piping bag with vanilla and the other with chocolate, then pipe. Garnish with crushed Oreos if desired.
- Store covered in the refrigerator for up to 3 days.
