Cooking (probably) The Most Flavorful Noodle Dish in the World
Ingredients
- Vegetable oil4 tbsp
- Pork shoulder8 oz
- Chicken thigh · boneless1 lb
- Peeled3
- Garlic · finely minced7–8
- Ground achiote powder½ tsp
- Celery2
- Snap pea1 cup
- Cabbage4 cups
- Oyster sauce3 tbsp
- Sugar½ tsp
- Soy sauce3 tbsp
- Fish sauce1–2 tsp
- Chicken stock4 cups
- Noodle8 oz
- Salt
- Cracked pepper
- Lemon
Instructions
- Heat 2 tablespoons of the oil in a large wok over medium-high heat until it just starts to smoke lightly. Add the pork, season with salt and pepper, and stir-fry 3 to 4 minutes until browned on all sides and cooked through. Set aside in a large bowl or platter.
- Add 1 more tablespoon of oil, then the chicken, and season with salt and pepper. Cook 2 to 3 minutes without stirring, then stir-fry 3 to 4 minutes until well browned and cooked through. Set aside with the pork.
- In the rendered fat, add the onions and a gentle pinch of salt. Cook over low to medium heat 10 to 12 minutes, stirring often, until browned and tender. Stir in the garlic for 30 to 45 seconds, then stir in the achiote powder if using. Set aside with the meat.
- Add the remaining oil and raise the heat to high. Add the carrots, celery, snap peas and cabbage, season lightly with salt, and stir-fry 90 seconds. Set aside with the other ingredients.
- In the wok over medium heat, combine the oyster sauce, sugar, soy sauce, fish sauce if using, and the chicken stock. Bring to a simmer.
- Add the noodles and stir constantly until they have absorbed all the liquid and are cooked, about 3 to 4 minutes.
- Return the meat and vegetables to the wok and stir until everything is combined.
- Finish with a squeeze of lime or lemon juice if using, and sliced green onions if you like.
