Ingredients

Instructions

  1. Put the pork and coarse salt in a large bowl and mix until the salt is evenly worked in.
  2. Heat the oil in a large wok over medium heat for 60 to 90 seconds. Add half the pork, spread it along the sides of the pan and cook for 2 to 3 minutes without moving it.
  3. Stir-fry for a few minutes, seasoning with 1 teaspoon of pepper, until browned on all sides, about 6 to 8 minutes. Set aside on a plate and repeat with the remaining pork.
  4. Pour off half to two-thirds of the rendered fat. Return the pan to medium heat, add the onions with a light pinch of salt and sauté for 5 minutes, until lightly browned. Lower the heat and cook, stirring occasionally, for another 10 minutes, until well caramelized.
  5. Stir in the garlic and cook for 30 to 45 seconds. Return the pork to the pot with the sugar and the remaining 1 teaspoon of pepper and cook for 1 minute.
  6. Add the soy sauce, vinegar and fish sauce and cook for 2 minutes.
  7. Add the chicken stock and bay leaves, cover, and cook over low to medium heat for 30 to 35 minutes.
  8. Uncover and cook for another 30 to 35 minutes to reduce the sauce.
  9. Serve the pork over rice, using a slotted spoon.
