Ingredients
- Tomato4
- Salmon10 oz
- The Fit Cook Sea Blend1 tbsp
- Olive oil10 tsp
- Onion · diced½ cups
- Garlic · minced1 tbsp
- Caper2 tbsp
- Chicken broth1 ½ cups
- Tomato paste1 tbsp
- Lemon2 tsp
- Oregano2 tsp
- Thyme · dried1 tsp
- Salt
- Black pepper
- Parsley
- Zaatar
Instructions
- Set the oven to broil.
- Spray the whole tomatoes with avocado oil, season with a pinch of sea salt and pepper, and roast for 10–12 minutes, until soft and blistered. Remove and set aside.
- Lower the oven to 400°F (200°C).
- Season the salmon fillet with a little olive oil and the sea blend.
- Heat a skillet on high. Add 1½ tablespoons olive oil, then sear the salmon skin-side up for 1–2 minutes. Remove it from the skillet.
- Reduce the skillet to medium and let it cool slightly. Add the remaining olive oil, onion, garlic and capers, and cook for 2–3 minutes until the onion is slightly browned and translucent.
- Add the roasted tomatoes and press them gently with a spatula so they burst into a sauce.
- Add the chicken broth and tomato paste and stir. Bring to a light simmer and add the remaining ingredients, stirring often. Add another tablespoon of tomato paste for a thicker sauce, or broth by the tablespoon for a thinner one. Season with sea salt and pepper to taste.
- Nestle the salmon into the tomato sauce and bake at 400°F (200°C) for 8–10 minutes.
