- Add the tomato paste and cook until it darkens, 3 to 5 minutes.
- Add the diced tomatoes, garlic, dried basil and red pepper flakes. Turn off the heat and let the mixture thicken slightly, about 5 minutes.
- Blend the sauce until smooth, then return it to the pan and season with salt and pepper. Stir in the fresh basil.
- In a large bowl, mix the Monterey Jack, mozzarella and Parmesan.
- Place the wonton wrappers on a flat surface. On each, put ½ tsp of the cheese mix, 1 tsp sauce, ½ tsp pepperoni and another ½ tsp cheese.
- Brush the wrapper edges with water. Fold two opposite corners over the filling, then fold the other two corners to meet in the centre, sealing tightly.
- Heat the vegetable oil in a large pot over medium-high heat to 375°F (190°C).
- Fry the rolls in batches for about 2 minutes per side, until deep golden brown. Drain on a paper towel-lined plate and cool slightly.
- Serve with the remaining sauce for dipping.
