Corn Ribs

Ingredients

Instructions

  1. Using a sharp knife on a non-slip board, trim off the base and the pointed tip of each corn cob. Stand the cob upright and cut it in half, then cut each half in half again to make quarters. Cutting tip: tap the back of the knife to lodge it in the cob, keep tapping to work it down, then rock the knife through the lower half.
  2. For easier cutting, cut the cobs into half-length ribs.
  3. Preheat the BBQ on high, or the oven to 200°C/375°F (180°C fan).
  4. Melt the butter in a small saucepan over medium heat. Add the garlic and cook for 20 seconds until fragrant. Take off the heat and keep warm and liquid.
  5. Mix the garlic powder, smoked paprika, salt and black pepper in a small bowl.
  6. Put the corn in a large bowl and toss with the olive oil. Sprinkle the seasoning over gradually, tossing between additions, so it coats evenly.
  7. BBQ: place the corn kernel side down on the grill and cook for 8 minutes, until charred spots appear and the pieces curl into ribs. Then cook each cut side for 1 minute.
  8. Oven: bake the corn kernel side up for 25 to 30 minutes. It will curl less and will not develop charred spots.
  9. Return the corn to the bowl, pour over the garlic butter and toss.
  10. Pile onto a plate, sprinkle with the parsley and serve.
