Cottage Cheese Bread
Ingredients
- Cottage cheese1.3 cups
- Egg7
- Yeast1 ½ tsp
- Bread flour5 cups
- Salt1 tbsp
- Olive oil1 tbsp
Instructions
- Blend the cottage cheese and egg whites until smooth, about 30 seconds. Set aside.
- Stir the water and yeast together in a large bowl and let stand about 10 minutes, until bubbly.
- Add the cottage cheese mixture to the yeast mixture. Stir in the flour and salt, switching from a whisk to a fork when it gets too sticky, until a shaggy dough forms.
- Turn the dough onto a clean work surface and knead until smooth, about 5 minutes. Rub your hands with a little oil if the dough sticks, if using.
- Cover the dough and let it rise in a warm spot until doubled, about 1 hour. Shape it into your desired shape and let it rest for another 30 minutes.
- Meanwhile, preheat the oven to 415°F (about 210°C) with the rack in the lower third.
- Place the loaf in a parchment-lined 1-pound loaf pan and bake until golden and puffy, 45–50 minutes.
- Let the bread cool slightly, about 10 minutes, then slice.
