- Cumin · ground½ tsp
- Saffron¼ tsp
- Tomato2
- Red lentil1 cup
- Spinach · chopped
- Lemon2 tsp

Instructions
- Heat the olive oil in a stock pot over medium heat.

- Add the vegetables and stir. After about 5 minutes, when they are lightly softened, add the paprika, cumin and saffron and stir briefly.
- Add the grated tomatoes, raise the heat, stir and then simmer.
- Rinse the red lentils in a fine sieve under water, removing any debris.
- When the tomatoes have slightly thickened (3-4 minutes), add the lentils, water and bay leaf and stir. Bring to a boil, cover and lower to low heat.
- Cook until the lentils are soft, about 15 minutes in the creator's test (check the package instructions for your lentils).
- Stir in the spinach and cook until lightly wilted. Season with salt and pepper, add the lemon juice, mix once more and remove from the heat.
- Serve in shallow bowls topped with a spoonful of Greek yogurt and chopped parsley.
