Instructions
- Put the cranberry glaze ingredients in a skillet on medium heat. Keep stirring and breaking up the cranberries.
- Bring to a gentle simmer, lower the heat, and keep stirring and mashing the cranberries until they break down into a juice.
- Once it thickens enough to coat a spoon, take it off the heat and let it cool. No cornstarch or arrowroot is needed. Store in an airtight container in the fridge for 1.5 to 2 weeks.
- Set the oven to 225°F (107°C).
- Pat the salmon dry, then season and rub the seasonings all over it.
- Brush the salmon with two tablespoons of glaze. Place it on a wooden plank lined with parchment paper, or on a parchment-lined baking tray.
- Bake for 10 minutes, then remove and brush with glaze. Repeat for 60 minutes in total.
- Each time, wipe off any white albumin, then brush with 1/2 to 1 tablespoon of glaze during the first 40 minutes.
- From the 40-minute mark, once the salmon is free of albumin, brush with the remaining glaze for the next 20 minutes. If it needs longer, bake an extra 10 minutes. Do not raise the heat.
- Rest for 15 to 20 minutes before serving. Garnish with fresh thyme.
