Creamy Cheesecake Recipe 😍
Ingredients
- Biscuit250 g
- Butter6 tbsp
- Cream cheese4 cups
- Sugar1 cup
- Heavy cream¼ cups
- Vanilla1–2 tsp
- Egg4
- Sour cream1 cup
- Cornstarch1 ½ tbsp
- Lemon
- Salt
- Fresh berries
- Strawberry jam
Instructions
- Preheat the oven to 160°C (325°F). Crush the biscuits into fine crumbs, mix with the melted butter, and press firmly into the base of a 23 cm (9-inch) springform pan. Bake for 7-8 minutes, then lower the oven to 150°C (300°F).
- Beat the cream cheese and sugar until completely smooth, about 2 minutes.
- Add the eggs one at a time, mixing just until each is combined. Then add the vanilla, sour cream, cream, salt, lemon zest and cornstarch, and beat until smooth. Do not overmix.
- Wrap the outside of the springform pan tightly in foil. Pour the batter over the crust and smooth the top. Set the pan in a large roasting tin and pour hot water into the tin until it reaches halfway up the sides of the pan.
- Bake for 45-50 minutes, until the edges are set but the centre still jiggles slightly.
- Turn off the oven, leave the door slightly open, and let the cheesecake rest inside for 1 hour. Then cool at room temperature for another hour and refrigerate for at least 4 hours, preferably overnight.
- Before serving, top with fresh berries and, if you like, a light glaze of warmed strawberry jam.
