Creamy Fish Pie with Cheesy Mash
Ingredients
- Potato · peeled chopped1 kg
- Butter3 tbsp
- Cream3 tbsp
- Salt
- Black pepper
- Milk600 ml
- Salmon · boneless2
- Cod · boneless1–2
- Prawn · cooked15
- Flour2 tbsp
- Cheddar cheese · grated150 g
- Chive · chopped1 tbsp
- Pea
- Sweet corn
Instructions
- Heat the oven to 200°C (400°F, fan).
- Peel and chop the potatoes into large chunks, cover with cold water in a pan, bring to the boil and simmer for 15 minutes.
- Drain and mash the potatoes. Stir in half the butter, the cream and a large pinch of salt and pepper. Set aside.
- In a large saucepan, bring the milk with the salmon and cod or haddock to the boil, then simmer for 2–3 minutes until the fish is cooked and starting to flake. If using raw prawns, add them for the last minute of cooking.
- Put the flaked fish and prawns (add cooked prawns now if using) in a large baking dish, removing skin if present.
- Pour the cooking liquid into a jug and set aside.
- In the milk pan, melt the remaining butter, stir in the flour and cook on medium heat for 1 minute, stirring with a wooden spoon.
- Slowly whisk in the reserved cooking liquid gently so the sauce does not froth. Let it thicken for a few minutes.
- Off the heat, stir in half the cheese and a pinch of black pepper.
- Pour the sauce over the fish and prawns.
- Spread the mash over the top, then use a fork to make lines in it so it crisps.
- Scatter the remaining cheese over the top and bake for 15–20 minutes, until melted and golden.
- Sprinkle with chopped chives and serve with peas and sweetcorn.
