- Milk¾ cups
- Vegetable broth¾ cups
- Oregano · dried1 tsp
- Thyme · dried½ tsp
- Manchego cheese · grated2 tbsp

- Chive · chopped
Instructions
- Fill a stockpot a little more than halfway with water, season generously with salt and bring to a high heat.
- Meanwhile, remove 1 to 2 outer leaves from the cabbage, cut the head into 4 even pieces, cut out each stem, and slice the cabbage 1 cm thick. Rinse the slices in a colander under water.
- When the water boils, add the sliced cabbage and boil for 2 to 3 minutes, until just tender. Drain and rinse under cold water.
- Heat a large frying pan over medium heat and add the olive oil. After a couple of minutes, add the chopped garlic and stir until lightly sautéed, about 1 minute.
- Add the flour and stir for 2 minutes. Then add the milk, vegetable broth, oregano and thyme, and stir for 4 to 5 minutes until the sauce is slightly creamy. Season with salt and pepper, add the cabbage and stir, then lower to low heat and simmer for a couple of minutes.
- After 3 to 4 minutes, when the cabbage is heated through, turn off the heat, stir in the grated cheese and lemon juice, transfer to a large serving dish and top with chopped chives.
