Creamy Hummus Recipe | Easy Homemade Hummus From Scratch #hummus #homemadefood
Ingredients
- Chickpea1 lb + ⅓ cups
- Baking soda1 tsp
- Tahini1 cup
- Cumin1 tbsp
- Smoked paprika2 tsp
- Garlic2
- Lemon
- Salt
- Fine pepper1 tsp
- Aquafaba¼ cups
- Olive oil2 tbsp
- Sumac · smoked
Instructions
- Soak the dried chickpeas in plenty of water overnight (about 12 hours is also fine), keeping them out of the fridge.
- Drain and rinse the chickpeas. Skip the soaking if using canned chickpeas, but keep their liquid (aquafaba).
- Put the chickpeas in a pot with fresh water and the baking soda. Bring to a boil, then lower the heat and simmer for about 1 to 1.5 hours until tender. Keep about 1 cup of the cooking water.
- Rub off the skins of the cooked chickpeas, ideally at least 70% of them, by agitating them in clean water until the skins float off.
- Blend the chickpeas with the other blend ingredients in a powerful food processor or high-speed blender.
- While blending, slowly drizzle in the olive oil, then the 1/4 cup of aquafaba. The stream should be thinner than a pencil. Blend until smooth.
- Season to taste with cumin, sea salt, white pepper and citric acid or lemon juice. If too thick, add aquafaba by spoonfuls while blending; if too watery, add olive oil or tahini by spoonfuls.
- Spread into a serving bowl, make a circular groove in the top with the back of a spoon, and garnish with olive oil and smoked paprika, sumac or parsley if you like.
