Creamy Lemon Pasta Recipe
Ingredients
- Garlic1–2
- Lemon1
- Butter3 tbsp
- Olive oil1 tbsp
- Heavy cream⅔ cups
- Salt
- Pasta10 oz
- Parmesan cheese¼ cups
- Parsley2 tbsp
Instructions
- Bring a large pot of salted water (1 tablespoon salt per litre) to the boil. Cook the pasta until al dente, then reserve 1 cup of the cooking water before draining.
- Heat the olive oil in a large pan over low heat. Add the minced garlic and cook 1–2 minutes until fragrant, without browning. Add the butter and lemon zest and stir until melted.
- Stir in the lemon juice, heavy cream and a pinch of salt. Bring to a gentle simmer over medium-low heat.
- Add the drained pasta to the sauce with the Parmesan and a splash of the reserved pasta water. Toss until the sauce coats the pasta, adding more pasta water if needed for a creamy texture.
- Finish with chopped parsley and extra Parmesan if you like, and serve straight away.
