CREAMY Onion Spaghetti | Possibly the BEST 20 Minute Pasta Recipe
Ingredients
- Spaghetti8 oz
- Extra virgin olive oil3 tbsp
- Onion2
- Garlic4 cloves
- Flour1 tbsp
- Oregano · dried1 tsp
- Thyme · dried½ tsp
- Chili flake · crushed¼ tsp
- Vegetable broth¾ cups
- Milk¾ cups
- Manchego cheese · grated¼ cups
- Lemon2 tsp
- Salt
- Black pepper
- Cheese · chopped grated
Instructions
- Fill a stockpot a little over halfway with water, season it generously with salt, and bring it to a boil over high heat.
- In a large frying pan over medium heat, warm the olive oil. Add the sliced onions and stir, then keep stirring every 1 to 2 minutes until they are evenly softened.
- Once the water boils, add the spaghetti and stir every 2 to 3 minutes so it cooks evenly and does not stick.
- When the onions are translucent after 8 to 10 minutes, add the chopped garlic and stir for 30 seconds. Then add the flour and stir constantly for 2 minutes.
- Add the oregano, thyme and crushed red pepper and stir quickly. Pour in the vegetable broth and milk and stir in a circular motion for about 4 to 5 minutes, until the sauce is slightly creamy. Season with salt and pepper and reduce to low heat.
- When the spaghetti is al dente, use tongs to move it straight from the pot into the pan with the sauce, then turn off the heat.
- Add the grated cheese and lemon juice and toss gently until well combined.
- Divide between shallow bowls, top with a little grated cheese and chopped chives, and serve immediately.
