Ingredients

Instructions

  1. Whisk the cheese, whole egg, egg yolks, garlic, salt and pepper together in a medium bowl and set aside.
  2. Bring a large pot of salted water to a boil over medium-high heat.
  3. While the water heats, warm the olive oil in a large skillet over medium heat. Add the bacon and cook until crispy, about 8 minutes. Take off the heat and drain on paper towels.
  4. Cook the spaghetti in the boiling water until al dente, about 10 minutes.
  5. When the pasta is al dente, turn off the heat. Reserve ½ cup (120 ml) of the pasta water, then whisk ¼ cup (60 ml) of the hot water into the egg mixture.
  6. Using tongs, transfer the pasta to a large serving bowl without draining it. Add the egg mixture and bacon and toss until creamy and the cheese has melted. If the sauce is too thick, add the remaining pasta water 1 tablespoon at a time.
  7. Season to taste with more salt, then serve right away, garnished with parsley if you like.
