Creamy Pumpkin Pasta | CRAZY Delicious 20 Minute Pasta Recipe
Ingredients
- Penne8 oz
- Extra virgin olive oil2 tbsp
- Onion1
- Garlic4 cloves
- Paprika · smoked½ tsp
- Thyme · dried½ tsp
- Flour½ tbsp
- Milk½ cups
- Vegetable broth½ cups
- Pumpkin · canned1 cup
- Manchego cheese · grated1 oz
- Salt
- Black pepper
Instructions
- Fill a stockpot a little over halfway with water, season generously with sea salt, and bring to a high boil.
- Meanwhile, finely chop the onion, roughly chop the garlic, and heat a large frying pan over medium heat.
- When the water boils, add the penne and cook until al dente, following the package instructions.
- Add the olive oil to the hot pan, then the onion and garlic. Stir constantly until the onion is translucent, about 3 to 4 minutes.
- Stir in the paprika and thyme, then the flour, and mix constantly for 1 to 2 minutes.
- Add the milk and vegetable broth and stir gently until the sauce thickens.
- When slightly thickened, after about 3 minutes, stir in the pumpkin puree, season with sea salt and black pepper, and reduce to low heat.
- When the pasta is al dente (about 10 minutes in the creator's test), transfer it straight from the pot into the sauce pan; a little starchy water is fine.
- Turn off the heat and toss the pasta with the sauce.
- Serve at once topped with the grated cheese and parsley.
