Instructions
- Bring a large pot of salted water to the boil and cook the pasta for 1 minute less than the packet says.
- In a large, high-sided pan over medium-high heat, cook the prawns in olive oil for 1 minute per side. Season, then remove them from the pan.
- Sauté the diced onion with seasoning for 4 minutes, stirring often. Add the garlic and sauté for 1 minute. Reduce the heat to medium, add the tomato paste and cook for 2 to 3 minutes.
- Deglaze the pan with the white wine. Add the halved cherry tomatoes and seasoning, and cook for 8 minutes, or until soft and broken down, mashing them with a wooden spoon. Raise the heat to medium-high.
- Add the cream, chilli, and basil stems if using. Bring to a simmer, then reduce the heat to low and cook for 6 to 7 minutes until thickened.
- Stir in the parsley, the cooked pasta and the prawns with any juices. Mix well, loosen the sauce with pasta water as needed, then check the seasoning.
- Serve in bowls topped with grated Pecorino Romano or Parmesan, cracked black pepper and basil leaves if using.
