Creamy Stove-top Mac & Cheese | Ambitious Kitchen
Ingredients
- Pasta shell10–12 oz
- Butter3 tbsp
- Flour3 tbsp
- Salt1 tsp
- Onion powder½ tsp
- Garlic powder½ tsp
- Black pepper · ground
- Milk2 ½ cups
- Cheddar cheese · shredded8 oz
- Gruyère cheese4 oz
Instructions
- Bring a large pot of well-salted water to a boil over high heat. Cook the pasta until al dente following package directions. Drain and set aside.
- In a large oven-safe skillet, melt the butter over medium heat. Whisk in the flour and cook, whisking constantly, for about 30 seconds until a paste forms.
- Slowly pour in the milk while whisking constantly to remove lumps. Bring to a simmer, stirring occasionally, until thickened, 3 to 5 minutes.
- Reduce the heat to low. Stir in the salt, garlic powder, onion powder and plenty of black pepper. Add the cheddar and gruyere and stir until fully melted. Taste and adjust salt and pepper.
- Add the pasta to the sauce and stir gently to combine. Add a splash of milk or reserved pasta water if you want it creamier.
- Serve straight from the pan, or top with the extra cheddar and gruyere and broil for 1 to 2 minutes until bubbly and golden.
