- Oregano · dried1 tsp
- Paprika · smoked½ tsp
- Tomato4
- Lima bean1 jar
- Spinach · chopped
- Lemon2 tsp

- Manchego cheese · grated2 tbsp
Instructions
- Heat the olive oil in a large frying pan over medium heat.
- While the oil heats, roughly chop the onion and garlic.
- Add them to the pan, stir, then keep stirring about every minute so they saute evenly.
- Meanwhile, cut the tomatoes into small bite-sized pieces.
- After about 5 minutes, when the onions are translucent, add the tomatoes, oregano and paprika, season with salt and pepper, and keep stirring about every minute.
- After about 8 minutes, when the tomatoes have broken down and are lightly sauteed, take the pan off the heat.
- Drain and rinse the butter beans.
- When the mixture has cooled slightly, about 5 minutes, blend it in a tall container with a hand blender until creamy. A food processor, stand blender or nutribullet also works.
- Return the pan to medium heat. Add the blended sauce, drained beans and a small pinch of salt and pepper, and simmer.
- After simmering the beans for 10 minutes, stir in the lemon juice and spinach until the spinach just wilts, then remove from the heat.
- Transfer to a large serving dish, top with the grated cheese if using, and serve warm or at room temperature.
