Ingredients

Instructions

  1. Mix milk, sugar, egg and yeast in a bowl. Add flour and salt and mix into a dough.
  2. Rest the dough for 10 minutes, then work in the softened butter until fully absorbed.
  3. Knead on a lightly floured surface until smooth and elastic, then shape into a ball.
  4. Put the dough in an oiled bowl, cover, and let it rise until doubled in size.
  5. Over medium-low heat, stir milk and sugar in a saucepan until the sugar dissolves.
  6. In a separate bowl, whisk egg yolks, milk and vanilla, then whisk in 3 tablespoons cornstarch until smooth. Pour this into the hot milk mixture and keep stirring until thick. Off the heat, stir in the butter. Transfer to a glass bowl, cover with cling film and let cool completely.
  7. Punch the air out of the risen dough and roll it to 12 mm (1/2 inch) thick. Cut out donuts with a 3-inch cutter and cover for 15 minutes.
  8. Fry the donuts in oil over medium-low heat until golden.
  9. Poke a hole in each donut and fill with the custard. Set aside.
  10. For the caramel, cook sugar and water in a saucepan over medium-low heat until amber.
  11. Carefully dip each filled donut in the caramel.
