Ingredients

Instructions

  1. Whisk the Cremora, eggs, salt and pepper together in a bowl until combined. Set aside.
  2. Cut a rectangle out of each slice of bread, keeping the crust intact. Spread margarine on both sides of the crusts and the inner pieces. Set aside.
  3. Heat a little margarine in a large pan over medium heat until melted. Sauté the onion and bacon for 3-4 minutes until browned. Add the mushrooms, tomato and garlic and sauté for a further 2-3 minutes until cooked.
  4. Shape the filling in the pan into 2 rectangles, slightly smaller than the bread slices. Lower the heat, then place the crusts over the filling so they touch the pan and enclose the filling.
  5. Slowly pour the egg mixture over the filling and cook for about 2 minutes until set through.
  6. Cover the filling with cheese, then top with the inner bread rectangles. Flip the pieces and cook the other side for about 2-3 minutes until golden brown and the cheese has melted.
  7. Serve with the sliced avocado, chopped chives and chutney-mayo.
