Ingredients

Instructions

  1. Preheat the oven to 200°C. Roll the pastry into a rectangle on a lined tray and prick it all over with a fork.
  2. Cover with more paper and a second tray to weigh it down. Bake for 40-45 minutes until golden.
  3. Cool the pastry and trim it into two 20 cm squares.
  4. Whisk the egg yolks, sugar, cornflour and vanilla together.
  5. Heat the water and Cremora until steaming. Slowly whisk half into the egg mixture, then pour everything back into the pot.
  6. Whisk over medium heat for 5-7 minutes until thick. Stir in the butter until smooth.
  7. Line a 20 cm tin with paper. Lay one pastry sheet in the base, pour in the custard, and top with the second sheet.
  8. Refrigerate for 4 hours or overnight until set.
  9. Slice, dust with Cremora, and serve.
