Crispy chicken fry recipe | How to make crisp fried chicken bites
Ingredients
- Oil1–2 tbsp
- Curry1–2 sprigs
- Chili pepper2–3
- Black pepper · powder½ tsp
- Hew nuts12 tbsp
- Cilantro1 tbsp
- Chicken½ kg
- Lemon1 ½ tbsp
- Turmeric¼ tsp
- Chili powder1 tbsp
- Onion1
- Garlic · paste1 tbsp
- Ghee1 tbsp
- Salt½ tsp
- Coriander seed2 tbsp
- Cinnamon2 inches
- Clove6
- Cardamom4
- Cumin½ tsp
- Fennel seed½ tsp
Instructions
- Optional: dry-roast the whole spices over medium heat until aromatic and crunchy, then grind to a fine powder for garam masala.
- Put the chicken in a large pot with 2 tablespoons water. Add the crushed onion, ginger garlic paste, garam masala, chili powder, salt, turmeric, ghee and lemon juice.
- Cook over medium heat until the chicken is soft and tender, adding a little water if it dries out. Turn off the heat; excess moisture at this stage is fine.
- Heat oil or ghee in a pan, add the curry leaves and green chilies, and fry until the leaves are crisp and aromatic.
- Add the cooked chicken with its stock and masala, then add the cashew powder and pepper powder.
- Fry on medium-high heat until all excess moisture evaporates, stirring well, for 3 to 4 minutes or until the cashews smell fragrant. The masala should coat the chicken; add a little ghee if wanted.
- Garnish with chopped coriander leaves and sprinkle with lemon juice before serving hot.
