- Vegetable oil · for frying
- Buttermilk3 cups
- Hot sauce2 tbsp
- Garlic powder1 tbsp
- Baking powder1 tsp
- Flour2 cups
- Breadcrumb3 cups
- Butter · melted1 cup
Instructions
- Stir the shredded chicken, cream cheese, mozzarella, Parmesan, parsley, black pepper, chicken bouillon, salt, smoked paprika and garlic together in a large bowl until well combined.
- Pair larger onion rings with slightly smaller ones. Place one larger ring flat, spoon in filling to fill it without overpacking, then press a smaller ring on top to seal the filling in.
- Freeze the filled rings for 30 minutes.
- Whisk the buttermilk, hot sauce, garlic powder, baking powder, 1 cup of flour and 2 teaspoons of salt in a bowl. Put the panko in a second bowl. Mix the remaining 1 cup of flour with 1 teaspoon of salt in a third bowl.
- Coat each ring in the flour mixture, then the buttermilk mixture, then the panko. For extra crunch, repeat the buttermilk and panko coating.
- Heat vegetable oil in a heavy pot to 350°F, using 2–3 inches of oil. Fry 4–6 rings at a time for 3–4 minutes per side until golden and crisp. Drain on paper towels or a wire rack.
- Cook the melted butter, parsley and garlic over low heat, stirring constantly, for about 2 minutes until the butter has melted and the mixture smells fragrant.
- Brush the garlic butter over the hot rings and garnish with more Parmesan. Serve with garlic aioli, ranch or marinara.
