Instructions

  1. In a chopper, add the chicken, breadcrumbs, paprika, white pepper, pink salt, chicken powder, mustard powder, black pepper, garlic powder, cornflour, soy sauce and cream, and chop well.
  2. Grease your hands with oil, take 100 g of the mixture and shape it into a patty.
  3. In a bowl, mix the all-purpose flour, cornflour, paprika, garlic powder, black pepper, baking powder, mustard powder and pink salt.
  4. Gradually add the chilled water while whisking until smooth to make the slurry.
  5. Put the breadcrumbs in another bowl.
  6. Dip each patty in the slurry, then coat it in breadcrumbs.
  7. On parchment paper, place a 4-inch mould, put the patty inside and press it down with a presser.
  8. Remove from the mould and place the patty on a parchment-lined tray. Makes 12 patties. Can be frozen up to 1 month in a zip-lock bag or airtight container.
  9. Heat canola oil in a wok to 160°C.
  10. Fry the patty on medium heat until golden and crispy.
  11. Assemble: on the bun base, add mayonnaise, ketchup, shredded iceberg, the crispy patty and a cheddar cheese slice, then more iceberg, and mayonnaise and ketchup, then top with the bun.
