Ingredients

Instructions

  1. Whisk the buttermilk, 1 teaspoon salt and 1 teaspoon garlic powder in a large bowl. Add the chicken thighs and make sure they are fully covered. Cover and refrigerate for at least 2 hours, or overnight.
  2. In a large shallow bowl, mix the flour, 2 teaspoons salt, 2 teaspoons smoked paprika, black pepper to taste, 1 to 2 teaspoons garlic powder, 1 teaspoon baking powder and 1 teaspoon onion powder. Lift the chicken out of the marinade, let the excess drip off, and coat each piece in the flour mixture. Press the coating on firmly, then shake off the excess.
  3. Heat oil in a deep pot to 350 to 375°F (175 to 190°C). Add 2 to 3 pieces of chicken at a time and fry for 6 to 7 minutes, until golden brown and the internal temperature reaches 165°F (75°C). Drain on a wire rack or paper towels and rest for 10 minutes.
  4. Whisk all the sauce ingredients in a small bowl until smooth, then adjust salt and heat to taste.
  5. Toast the hamburger buns. Spread sauce on both halves, then add pickles, lettuce and a piece of crispy chicken. Top with the other half of the bun.
  6. Serve hot.
