Preparación
- Roast the garlic heads: cut off the top ¼ inch, drizzle with olive oil, add a pinch of salt and pepper, wrap in foil and bake at 350°F for 30 minutes, or until very soft. Cool, then squeeze out the cloves.
- Make the sauce: melt the butter in a large saucepan over medium heat. Add the honey, chipotle puree, apple cider vinegar and roasted garlic, and whisk. Bring to a simmer, then reduce the heat and simmer for 10 minutes, until syrupy. Set aside.
- In a large bowl, toss the wings with 1 teaspoon smoked paprika, 1 tablespoon Worcestershire sauce, 1 tablespoon blackened seasoning, 1 teaspoon each garlic powder, onion powder, salt and pepper until well coated.
- In a medium bowl, whisk the eggs, milk, hot sauce and a pinch of salt.
- In another bowl, whisk the flour, cornstarch and the remaining spices (1 teaspoon smoked paprika, 1 tablespoon blackened seasoning, 1 teaspoon each garlic powder, onion powder, salt and pepper).
- Heat 3 cups vegetable oil in a large pot to 350°F.
- Dip the wings in the egg mixture until evenly coated, then in the flour mixture, shaking off excess flour.
- Fry for 8 to 10 minutes, until golden and fully cooked. Drain on a wire rack.
- Toss the wings in the sauce until evenly coated. Garnish with sliced scallions and serve with ranch dressing.
