Instructions
- Preheat the oven to 400°F (200°C). Spread the frozen tater tots in one even layer on a large sheet pan and bake for 20 minutes, until lightly golden.
- While the tots bake, whisk together the mayonnaise, sour cream, buttermilk, 2 tablespoons cilantro, minced chipotles, 2 teaspoons chives, garlic powder and a pinch of kosher salt in a medium bowl until smooth. Cover and refrigerate.
- In a large skillet over medium heat, cook the bacon for 4 to 5 minutes per side, flipping once, until golden and crispy. Drain on paper towels, cool, then roughly chop.
- Take the tots out and raise the oven to 425°F (220°C). Flatten each tot gently with the base of a glass, without breaking them apart. Spread them evenly on the sheet pan and bake for another 20 minutes, until deeply golden and crispy. Let cool for 5 minutes.
- Put the cooled tots in a large bowl. Add the red onion, pickled jalapeños, corn, chopped bacon and as much dressing as you like, then toss to coat. Garnish with extra cilantro and chives and serve right away.
