- Chop the spinach, coriander, mint and green chillies into a flat bowl, add 1 tbsp pink salt and mix well.
- Cover and rest for 10-15 minutes so the salt draws out moisture from the greens.

- Add the boiled potato cubes and mix well.
- Add the rice flour and roasted gram flour, then add the water gradually and mix well.
- Cover and rest for 5 minutes.
- Uncover, shape 150 g portions of the mixture into patties (makes 8-9).
- Heat cooking oil in a wok to 170°C.
- Fry on medium to high heat until golden and crispy.
- For the green chutney, blend the garlic, ginger, green chillies, boiled potato, coriander, mint, roasted crushed cumin, 1/2 tsp salt, lemon juice and 1/3 cup water until smooth.
- To assemble, place a fried tikki on a serving plate and smash it, then top with boiled white chickpeas, whisked yogurt, gur imli chutney, the green chutney, sliced onions, more chickpeas, daal sev and pomegranate seeds.
