Crispy Fried Calamari Perfectly Tender & Crunchy
Ingredients
- Squid1 lb
- Milk1 cup
- Flour1 cup
- Cornstarch2 tbsp
- Smoked paprika1 tsp
- Black pepper½ tsp
- Oregano1 tsp
- Vegetable oil
- Salt
Instructions
- If using frozen rings, thaw them fully and drain off any excess liquid.
- Put the calamari rings in a bowl, pour in the milk so it covers them all, and refrigerate for 30 minutes.
- Mix the flour and cornstarch with the smoked paprika, black pepper and oregano on a plate.
- Coat each ring thoroughly in the flour mixture, then set aside on a plate.
- Pour oil into a small saucepan to a depth of 3-4 inches and heat over medium-high until it reaches 350°F, about 10 to 15 minutes. Check with an instant-read thermometer, or drop in a calamari ring: when it bubbles and floats up, the oil is hot enough.
- Fry a few coated rings at a time for 3 to 5 minutes, until golden brown.
- Move the fried calamari to a cooling rack, salt it, then fry the remaining rings. Serve straight away.
