Ingredients
- Oil3 tbsp
- Beef · chopped500 g
- Cornstarch3 tbsp
- Salt
- Black pepper
- Bell pepper · sliced1
- Onion · peeled sliced1
- Orange
- Soy sauce5 tbsp
- Sugar3 tbsp
- Garlic · peeled crushed2 cloves
- Rice wine vinegar1 tsp
- Ginger paste1 tsp
- Rice
- Scallion · chopped4
Instructions
- Heat the oil in a wok or large frying pan over high heat.
- Pat the beef dry with kitchen paper. Mix the cornflour with the salt and pepper, then toss the beef in it until fully coated.
- When the oil is hot, add the beef and fry until crispy, stirring about 3 or 4 times over 5-6 minutes, without moving it too much.
- Remove the beef with a slotted spoon and drain it on a bowl lined with kitchen paper.
- Lower the heat to medium. In the oil left in the pan, fry the sliced red pepper and onion for 2-3 minutes, until hot but still crunchy.
- Meanwhile, mix the orange zest, orange juice, soy sauce, sugar, crushed garlic, rice vinegar and ginger paste. Set aside.
- Pour the orange sauce over the vegetables, raise the heat and bring to the boil. Simmer for 1 minute.
- Return the beef to the pan, stir and heat through for 1 minute. If the sauce is too thin, stir in a little cornflour slurry to thicken.
- Once bubbling and thick, serve with boiled rice and garnish with the spring onions.
