Crispy Orange Beef

Ingredients

Instructions

  1. Heat the oil in a wok or large frying pan over high heat.
  2. Pat the beef dry. Mix the cornflour with the salt and pepper and toss the beef in it until fully coated.
  3. When the oil is hot, add the beef and fry until crispy, about 5 to 6 minutes, stirring about 3 or 4 times.
  4. Remove the beef with a slotted spoon and drain on kitchen paper.
  5. Lower the heat to medium. In the remaining oil, fry the red pepper and onion for 2 to 3 minutes, until hot but still crunchy.
  6. Meanwhile, mix the orange zest, orange juice, soy sauce, sugar, garlic, rice vinegar and ginger and set aside.
  7. Pour the orange sauce into the pan, turn up the heat and bring to the boil. Simmer for 1 minute.
  8. Return the beef to the pan, stir and heat through for 1 minute. If the sauce is too thin, stir in a little cornflour slurry.
  9. Once bubbling and thick, serve with boiled rice, topped with spring onions.
