Crispy Pea Fritters
Ingredientes
- Flour¼ xícara
- Cornstarch¼ xícara
- Baking powder½ colher de chá
- Garlic powder½ colher de chá
- Salt½ colher de chá
- Black pepper¼ colher de chá
- Egg1
- Milk2 colheres de sopa
- Pea · frozen2 xícaras
- Cheese · shredded1 xícara
- Scallion · finely sliced¾ xícara
- Olive oil¼ xícara
- Yoghurt½ xícara
- Lemon2 colheres de chá
- Extra virgin olive oil2 colheres de chá
- Garlic · finely grated0,13 colher de chá
- Pinch each salt and pepper
Modo de preparo
- Mix the batter: combine the flour, cornstarch, baking powder, garlic powder, salt, pepper, egg and milk until smooth.
- Stir in the frozen peas (broken up if clumped), cheese, green onion if using, and garlic if using, mixing until every pea is coated. The batter will look like too many peas, but it sets as it cooks.
- Heat enough oil to cover the base of a pan over medium-high heat (about 2 1/2 tablespoons).
- Pack a 3 tablespoon cookie scoop or 1/4 cup measure firmly with the mixture, place the mound in the pan and flatten it to about 1.25 cm (1/2 inch) thick. Repeat to fill the pan, cooking 4 or 5 at a time.
- Cook for 1 1/2 minutes until the underside is golden, then turn and cook the other side for 1 1/2 minutes until golden and crispy.
- Drain on a paper towel-lined tray. Repeat with the remaining batter to make 9 to 10 fritters in total.
- Make the sauce while the fritters cook: mix the yogurt, lemon juice, extra virgin olive oil, garlic if using, and a pinch each of salt and pepper, then set aside to let the flavours meld.
