Crispy Salt & Pepper Beef (Thit Bo Chien Muoi Tieu)
Ingredients
- Beef1 lb
- Salt¾ tsp
- Black pepper · ground½ tsp
- Five spice · powder¼ tsp
- Baking soda¼ tsp
- Cornstarch¼ cups
- Egg2
- Vegetable oil
Instructions
- Slice the beef thinly across the grain into bite-sized pieces.
- In a large bowl, marinate the beef strips with 1/2 teaspoon salt, 1/4 teaspoon black pepper, the Chinese five-spice powder and the baking soda for at least 10 minutes.
- In a separate bowl, whisk the egg whites and corn starch until no lumps remain. Add this mixture to the beef and toss gently until evenly coated.
- Deep fry the beef at 375°F in two batches for about 2 minutes per batch, until golden brown and crispy. Add the strips to the hot oil one at a time so they don't stick together.
- Drain the fried beef on a wire rack or a paper towel-lined plate.
- Put the cooked beef in a large bowl, toss with the remaining 1/4 teaspoon salt and 1/4 teaspoon pepper, and serve immediately.
