Crispy Shredded Halloumi Salad (with kale)
Ingredients
- Halloumi cheese225 g
- Olive oil1 ½ tbsp + ⅓ cups
- Pine nut¼ cups
- Kale5
- Red onion¼
- Dill · roughly chopped¼ cups
- Rice · cooked3 cups
- Apple cider vinegar3 tbsp
- Honey1 tsp
- Dijon mustard½ tsp
- Garlic1
- Salt¼ tsp
- Black pepper0.13 tsp
- Egg
Instructions
- Put the dressing ingredients in a jar and shake well. Set aside so the garlic flavour can mellow.
- Dry-toast the pine nuts in a large non-stick pan over medium heat, stirring often, for about 3 minutes until lightly browned in spots. Move to a bowl.
- Reheat the same pan over high heat with the olive oil. Fry the shredded halloumi for about 5 minutes until mostly golden, turning the heat down to medium-high if it browns too fast. Move to a bowl to crisp further as it cools.
- Put the kale and red onion in a bowl, pour over about 2 tablespoons of dressing and massage it into the leaves firmly.
- Add the rice, dill, most of the pine nuts and the rest of the dressing, then toss well.
- Spread the salad in a wide shallow bowl, top with the crispy halloumi and the remaining pine nuts, and serve.
