Crispy Thai Pork Bites in Sweet Chilli Sauce - NO DEEP FRYING!
Ingredients
- Pork loin600 g
- Fish sauce2 tbsp
- Cornstarch1 ½ tbsp + ½ cups
- Vegetable oil
- Sweet chilli sauce½ cups
- Lime1 ½ tbsp
- Garlic2
- Cilantro
- Rice
Instructions
- Toss the pork with the fish sauce, then with 1 1/2 tablespoons of cornflour so the coating is slightly sticky.
- Add the 1/2 cup of cornflour, toss by hand to coat each piece and separate any that stick together. Squeeze each piece lightly to help the flour cling, then shake off the excess in a colander.
- Heat about 0.5 cm (0.2 in) of neutral oil in a non-stick pan or large pot over high heat until a piece of pork sizzles immediately when dropped in.
- Cook half the pork in the oil for about 3 minutes in total: 1 minute undisturbed, then flip and cook about 2 more minutes, until golden and crisp. Do not overcook.
- Drain the pork on paper towel. Cook the remaining pork the same way.
- Pour off the oil, return the pan to medium heat, add the sauce ingredients and simmer about 2 minutes until syrupy.
- Add the pork and toss quickly to coat. Serve right away over rice, with coriander and lime wedges if you like.
