- Black pepper
- Saffron¼ tsp
- Greek yoghurt½ cups
- Dijon mustard1 tsp

Instructions
- Trim the tips off the zucchini, then finely grate them on a box grater. Put the shredded zucchini in a colander set over a bowl, salt it, and leave for 10 minutes.
- Whisk the flour and cornstarch in a large bowl. Make a well, crack in the egg and whisk it, then gradually whisk in the chilled club soda to a smooth batter.
- Stir the chopped onion, grated garlic, paprika and chives into the batter. Season with salt and pepper.
- Squeeze as much water as possible out of the zucchini using a cheesecloth or flour sack towel.
- Add the squeezed zucchini and the shredded cheese to the batter and mix once more.
- Heat the olive oil in a large frying pan over medium heat.
- Once the oil is hot, spoon in batter and gently flatten each portion. Space them in a single layer and cook in batches for 3 to 4 minutes per side, until golden and crispy.
- Drain the fritters on a wire rack set over paper towels.
- Crush the chopped garlic in a mortar with the saffron and a pinch of salt until smooth. Mix in the Greek yogurt, Dijon mustard, lemon juice and olive oil, then season lightly with salt and pepper and whisk.
- Spoon the dipping sauce into a serving dish, arrange the fritters around it, scatter chopped chives on top, and serve at once.
