- Ginger6 slices
- Flour495 g
- 1/2 tsp of alkali powder1 ½ g
- Yeast1 ½ g
- Garlic · paste
- Black fungus · dried
- Dried daylily buds 金針 or 黄花菜
- Mung bean
- Cilantro · diced
- Saltto taste
Instructions
- Soak the lamb meat and bones in clean water overnight.
- Put the lamb meat and bones into a clean pot of water. Bring to a simmer over high heat and skim off the scum.
- Put 1 tablespoon fennel seeds, 1 tablespoon Sichuan peppercorns, 3 bay leaves, 2 dried red chilies, 6 slices of ginger and a handful of scallion into a spice bag. Add the bag to the pot and simmer for 1 hour.
- After 1 hour, remove the lamb meat, chill it in the fridge for a few hours, then slice it thinly.
- Continue simmering the bones for another hour to finish the broth.
- Dissolve ½ teaspoon alkali powder in 240 g water. Mix this with 450 g all-purpose flour, then knead for 8–10 minutes by hand until smooth and elastic (or on low speed with a dough hook for 10–12 minutes). Rest the dough for 1 hour.
- Dissolve 1.5 g instant yeast in 25 g water, add 45 g all-purpose flour, and form a small ball. Cover and proof for 1 hour.
- After 1 hour, mix the small yeast dough into the large dough on low speed for 10 minutes, stopping a few times to redistribute the dough.
- Divide the dough into 8 equal pieces, shape each into a smooth round ball, cover and rest for 10 minutes.
- Roll one piece out to 5–6 inches (13–15 cm) across.
- Toast the flatbread in a lightly heated pan over medium heat, turning it so it cooks evenly, for 2–3 minutes per side, until the first side shows charred spots. It can be slightly undercooked. Repeat with the rest, then cover with a lightly damp cloth.
- Soak the wood ear mushrooms, dried daylily buds and mung bean noodles in water for 1 hour until rehydrated. Tear large wood ear into roughly 1-inch pieces.
- Dice the scallion and cilantro. Break the toasted bread into soybean-sized pieces.
- Simmer the bread pieces, lamb slices, wood ear, daylily and mung bean noodles in the broth for 3–5 minutes. Season with salt to taste.
- Serve with sweet preserved garlic on the side, and garnish with extra scallion, cilantro and a little chili paste.
