Ingredients

Instructions

  1. Preheat the oven to 160°C (325°F, 140°C fan-forced). Line a 20 cm (8 in) square tin with baking paper, leaving overhang.
  2. Spread the oats, chopped almonds and pepitas on a tray and bake for 10 minutes. Tip into a heatproof bowl, then add the sultanas, cinnamon and salt.
  3. Microwave the honey and peanut butter in a heatproof jug on high for 30 seconds, then mix until combined.
  4. Pour the warm honey mixture over the oat mixture and mix well until everything is coated, using a cutting motion if needed.
  5. Press the mixture firmly into the lined tin. Once cooled, scatter the chocolate chips over the top (if using), cover with paper and press them in.
  6. Refrigerate for 1 hour or until firm enough to lift out without bending.
  7. Preheat the oven to 160°C (325°F, 140°C fan-forced).
  8. Lift the slab out using the paper, cut in half, then cut each half into 5 to make 10 bars. Space them out on a tray.
  9. Bake for 25 minutes or until golden on top and golden brown at the edges but not burnt.
  10. Cool on the tray until crunchy, then store in an airtight container (in the fridge if the weather is warm).
