Dad Rates My Steamed Eggs & Pork?! (肉碎蒸蛋)
Ingredientes
- Ground pork5 oz
- Egg3
- Scallion1 talo
- Cornstarch1 colher de sopa
- Oyster sauce1 colher de sopa
- Salt1 colher de chá
- White pepper¼ colher de chá
- Oil2 colheres de chá
- Fl oz warm water9
Modo de preparo
- In a small bowl, mix the cornstarch, oyster sauce, salt, white pepper and water. Add the ground pork and stir to coat evenly, then stir in the oil.
- Finely chop the green onion for garnish.
- Beat the eggs in a bowl until smooth with no visible streaks. Season with salt, then stir in warm water (about 1.5 parts water to 1 part egg, adjusted to taste) until combined. Keep the water warm, not hot.
- Choose a heat-safe flat dish with steep sides about an inch deep. Oil the bottom and sides, then spread the marinated pork in a thin, even layer.
- Set up a steamer with enough boiling water to reach the rack, but keep it below the dish or touching it as you prefer, and make sure it will not boil dry.
- Place the dish on the rack, cover and steam on medium heat for 3–5 minutes, until the pork is about 80% cooked and juices start to pool.
- Uncover, pour the egg mixture slowly over the pork (strain it first for a silkier texture if you like).
- Cover the dish with plastic wrap or a plate to stop condensation, then replace the lid and steam on medium heat for 5–6 minutes. Turn off the heat and let it rest in the steamer for another 3–4 minutes.
- Check that the egg is firm and does not jiggle much. If it is still runny, steam another minute on medium heat, then turn off the heat and let it firm up.
- Lift the dish out carefully with oven mitts, garnish with the green onion and serve.
