Instructions

  1. Cut the chicken breast into 1-inch cubes.
  2. Put the chicken in a bowl, pushing it to one side. Combine the salt, sugar, oyster sauce, light soy sauce, dark soy sauce, cooking wine, white pepper, cornstarch and water, then mix into the chicken.
  3. Cut the broccoli stems, celery, carrot and both bell peppers into small cubes, trimming any tough fibres as needed.
  4. Smash the shallots with the flat of a knife, then peel. Peel and mince the garlic. Remove the stems from the dried chilies, leaving them whole.
  5. In a bowl, combine the salt, sugar, oyster sauce, light soy sauce, dark soy sauce, cooking wine, ground bean sauce and chili sauce. Stir well.
  6. In a separate bowl, mix the cornstarch with the water.
  7. Heat a wok on medium, add the cooking oil, then lower the heat to low. Fry the peanuts for about 2 minutes, then remove them. They crisp up as they cool.
  8. Keep the oil in the wok, turn the heat to high and add more oil. When it ripples, add the marinated chicken and cook 40 to 50 seconds, flipping, until cooked. Remove it.
  9. Bring about 4 cups of water to a boil in the wok with a lid and add salt. Blanch the carrot for 30 to 40 seconds, then the celery and broccoli stems for about 1.5 minutes, then both bell peppers for about 1 minute. Taste for the texture you like, then drain. Shock in ice water if not using immediately.
  10. Clean and dry the wok, return it to high heat and add oil. Fry the dried chilies briefly, push them up the side, then add the shallots and fry. Add the garlic and fry for 30 seconds.
  11. Return the chicken to the wok and add the vegetables. Stir-fry on high for 30 seconds.
  12. Pour in the sauce and stir to combine. After about 30 seconds, add a splash of water so the chicken stays juicy.
  13. Turn the heat to low, stir the cornstarch slurry and pour it in slowly while stirring until the sauce thickens smoothly.
  14. Drizzle in the sesame oil, mix, turn off the heat, and serve topped with the fried peanuts.
