Ingredients

Instructions

  1. Cut the chicken breast in half horizontally to even out its thickness, then cut it into strips about 1/2 inch thick.
  2. Dissolve the salt and cornstarch in the water in a medium bowl, add the chicken and mix to coat, then stir in the beaten egg.
  3. Slice the orange into eighths and squeeze the juice into a small bowl; set the juiced slices aside. Strain the juice if it has debris.
  4. Add the sugar and white vinegar to the juice, and the salt and oyster sauce to enhance the sauce. Mix the cornstarch and water in a small bowl to make a slurry.
  5. Cut the orange halves into 1/4 inch slices for garnish. If using the peel, trim off the flesh and white pith from the peel from the juiced slices, then cut the peel into very thin strips, using about half of it.
  6. Mix flour, cornstarch and baking powder, then stir in the water, adding more if needed. Stir in the beaten egg and oil until smooth; the batter should be thick enough to coat the chicken like pancake batter.
  7. Heat oil in a deep pot until the chicken is fully submerged, to 300°F. Mix the batter into the chicken while the oil heats.
  8. Fry the chicken pieces, added separately, for about 2.5 to 3 minutes until slightly golden, in two or more batches. Lift them out into a bowl.
  9. Heat the oil to 400°F. Return all the chicken and fry for another 2.5 to 3 minutes until golden brown. Remove the chicken and keep the oil for later.
  10. On high heat, add a little of the reserved oil to a wok, add the orange peel strips and stir briefly, then add the orange sauce and bring to a boil.
  11. Meanwhile, arrange the orange slices in a neat pattern around the edge of the serving plate.
  12. Lower the heat and slowly drizzle in the cornstarch slurry while stirring constantly. Add more oil. Simmer longer if you want a thicker sauce.
  13. Turn the heat back up, add the fried chicken and toss for 15 to 20 seconds, then turn off the heat. Drizzle in oil, mix quickly, and plate on the orange slices. Sprinkle with sesame seeds if using.
