🤤 Dad’s ADDICTIVE Peking Pork Chops! (京都肉排)
Ingredients
- Pork loin14 oz
- Oil10 oz + 1 tbsp + 1 tbsp
- Sugar11 ½ tsp
- Sesame seed1 tsp
- Cornstarch4 tbsp
- Oyster sauce1 tbsp
- Shaoxing wine1 tbsp
- White pepper¼ tsp
- Salt1 tsp
- Flour6 tbsp
- Baking powder1 tsp
- Vinegar5 tbsp
- Rice wine vinegar1 tbsp
- Ketchup4 tbsp
- Hoisin sauce1 tbsp
- Potato starch1 tsp
Instructions
- Cut the pork loin into 1/2-inch slices across the grain, then pound both sides with the back of a cleaver, also across the grain.
- Mix the cornstarch, oyster sauce, cooking wine, water, white pepper and salt in a bowl. Add the pork and knead by hand until fully coated.
- Whisk the flour, cornstarch, baking powder and salt in a bowl. Add water a little at a time, starting with 5 tablespoons and adding 2 more tablespoons each time, stirring clockwise with a spoon until smooth with no lumps.
- In a small bowl, mix the Chinese red vinegar, rice vinegar, ketchup, hoisin sauce, sugar and water. Taste and adjust the sauce if needed.
- Mix the potato starch with water to make a slurry. Stir the oil into the batter.
- Add batter to the pork, mixing so it is coated but not too thick; you may not need all of it. Heat a wok on high.
- When the wok starts to smoke, add oil and heat to 330°F to 350°F for the first fry. Fry the pork pieces one by one, without crowding (in batches if needed), for about 1.5 to 2 minutes.
- Lift the pork out with a spider strainer and set aside, removing any burnt bits from the oil. Repeat with the rest, making sure the oil is back at 330°F to 350°F.
- Raise the oil to 370°F for the second fry. Fry the pork (in batches if needed) for about 20 to 30 seconds, then remove and drain.
- Pour the oil out into a bowl to keep for reuse if wanted, and wipe out any leftover residue from the wok.
- Add the sauce to the clean wok over medium heat, stirring until it boils. Simmer for 1 to 2 minutes, then lower the heat and stir in the slurry a little at a time, using as much as needed.
- Taste and adjust the seasoning, adding more sugar if needed. Stir for 20 to 30 seconds.
- Turn off the heat, add the pork and toss until every piece is coated in sauce. Stir in the finishing oil for shine, then plate and sprinkle with sesame seeds.
