Ingredients

Instructions

  1. Cut the fish fillets into 6-7 pieces, then cut each piece into 1-1.5 inch strips.
  2. Season the fish with white pepper, cornstarch and salt, and mix with chopsticks until evenly coated.
  3. Chop the green onions finely.
  4. Crack the eggs into a bowl, add salt and white pepper, and beat with chopsticks or a fork.
  5. Heat the pan on high heat, add boiling water, then add the fish and cook for about 1.5 to 2 minutes, gently moving it, until it turns white.
  6. Drain the fish into a colander and dry the pan with paper towel.
  7. Heat the dry pan on high for about 2-3 minutes, then add the oil and tilt to spread it. It is ready when the oil shimmers or ripples.
  8. Turn the heat to medium. Pour in some of the egg (not all) and let it cook 15-30 seconds until set at the edges, then scatter the fish over it.
  9. Mix the green onions into the remaining egg, beat a few times, and pour it into the pan. Stir very little, lifting the edges with a spatula and adding oil around the perimeter halfway through.
  10. Cook for about 3-4 minutes until golden brown underneath, then slide onto a large plate, add oil to the pan, and flip the omelette back into the pan.
  11. Cook the other side for about 3-5 minutes until golden brown, pressing gently with the spatula now and then.
  12. Invert a plate over the pan and flip the pan so the omelette falls onto the plate, then cut and serve.
