๐ฅฌ ๐ Dadโs FANCY Braised Mushrooms & Bok Choy! (็ฝ่็ๅฌ่)
Ingredients
- Shiitake mushroom ยท dried3 oz
- Bok choy1 lb
- Garlic3 cloves
- Ginger4 slices
- Oil2 tbsp
- Cornstarch1 tsp
- Oyster sauce2 tbsp
- Soy sauce1 tbsp
- Dark soy sauce1 tsp
- Sugar1 tsp
- Saltยฝ tsp
- Shaoxing wine2 tsp
- Chicken stockยฝ tbsp
- Sesame oil1 tsp
Instructions
- Wash the dried shiitake twice, scrub off dirt, then soak in warm water (40-50ยฐC) for 30 minutes, weighted down so they stay submerged. Cut off and discard the stems, squeeze out excess water and keep the soaking liquid.
- Trim the hard, dirty ends of the bok choy, split large bunches if needed and wash thoroughly, paying attention to the base of the stems. Rinse again.
- Peel the garlic, trim the ends and slice each clove into 3-4 pieces. Cut the ginger into thin slices and halve each slice.
- Mix the oyster sauce, light soy sauce, dark soy sauce, sugar, salt and Shaoxing wine for the sauce.
- Heat a wok on medium, add oil, then stir-fry half the garlic and half the ginger for about 90 seconds until fragrant. Add boiling water and salt, and raise the heat to bring to a rolling boil.
- Add the bok choy and cook for about 2 minutes until the leaves are bright green and the stems just soften. Transfer to a bowl of ice water to stop cooking, then drain well.
- Wipe the wok dry, heat on low, add oil and the remaining garlic and ginger, and fry for 40-50 seconds until fragrant.
- Add the mushrooms and stir-fry for 50-60 seconds. Add the Shaoxing wine, then 2 cups of the mushroom soaking liquid.
- Add the sauce and bring to a boil on high. Then reduce to low and braise for 10-15 minutes, meanwhile arranging the bok choy in a circular dish with stems facing outward and leaves toward the centre.
- Test the mushrooms with a chopstick; they are ready when it pierces easily. Taste the sauce and adjust, then add the chicken bouillon (or a pinch of MSG for a vegetarian version).
- Mix cornstarch with mushroom soaking liquid in roughly a 1:3 ratio. On low heat, slowly stir the slurry into the mushrooms. Raise the heat to bring back to a boil, then stir in the sesame oil.
- Place the mushrooms cap-side up over the bok choy in the centre of the dish and pour the remaining sauce over them.
