Ingredients

Instructions

  1. Boil about 6 cups of water in a pot (the amount is flexible).
  2. Add the noodles to the boiling water and stir to separate them for 2-3 minutes.
  3. Drain the noodles, then dunk them in cold water for about 1 minute. Drain again and set aside.
  4. Prepare the vegetables: slice the celery small; slice the red onion; cut the yellow chives into about 1 inch pieces; cut the carrot into slices, then strips; cut the king oyster mushroom diagonally into slices, then strips; cut the green onion diagonally into about 1 inch pieces; wash the bean sprouts without cutting.
  5. Mix the oyster sauce, sugar, water, light soy sauce and dark soy sauce. Stir well and taste, adjusting if needed.
  6. Set the stove to high and heat the wok for 1-3 minutes until smoke just starts to appear. If using a nonstick pan, do not wait for smoke.
  7. Add the corn oil to the wok and swirl to coat the surface, then pour the oil into a bowl for later. Wipe off the outside of the wok.
  8. Add the celery, carrot and king oyster mushroom, then the green onion and red onion. Cook for 1.5-2 minutes, then move to a bowl. Do not add more oil.
  9. Turn off the heat. Return some of the oil to the wok, add the noodles and toss constantly. Turn the heat back to high and cook the noodles alone for about 2 minutes, adding more oil halfway through.
  10. Turn off the heat, return the cooked vegetables to the wok, then add the bean sprouts. Leave the heat off for about 1 minute, then turn back to high.
  11. Cook everything for about 5 minutes total. Add the sauce about 2 minutes in and mix well.
  12. Add the sesame oil and yellow chives about 4 minutes after the first vegetables went in, about 1 minute before finishing. Optionally add a little more oil for shine. Taste and serve.
