Ingredients

Instructions

  1. Wash the baby bok choy well: separate the stems, soak and scrub the base of each stem where dirt collects, then rinse under running water.
  2. Optionally soak the bok choy in water for 30 minutes.
  3. Drain in a colander and lay the bok choy flat on a towel to dry thoroughly before stir-frying.
  4. Cut the stems in half lengthwise. Separate the leaves from the stalks if you like, optionally cooking the stalks first.
  5. Heat a wok on high heat for 2โ€“3 minutes. Meanwhile, mince the garlic.
  6. Add the corn oil and heat until it shimmers and ripples across the surface.
  7. Add the minced garlic, then the stalks a few seconds later, then the rest of the bok choy.
  8. Stir-fry for 6โ€“8 minutes, until the stalks soften slightly and the leaves turn a deep, vibrant green.
  9. Just before finishing, add the salt, sugar and chicken bouillon (optional). Transfer to a plate immediately to stop overcooking.
