๐ Dad's Juicy Sweet and Sour Pork (ๅๅ่)!
Ingredients
- Pork shoulder10 oz
- Bell pepper3 oz
- Red onion1 oz
- Onion1 oz
- Pineapple4 oz
- Corn oilยฝ lb
- Garlic1 tsp
- Soy sauce1 tbsp
- Eggยฝ
- Flour2 tbsp
- Cornstarch10 tsp
- Ketchup4 tbsp
- Brown sugar4 tbsp
- Vinegar3 tbsp
- Saltยฝ tsp
Instructions
- Cut the pork across the grain into a few pieces, then slice those perpendicular to the grain into pieces about 1/4 to 1/2 inch thick.
- Mix the pork with garlic salt and light soy sauce for about 1 minute, then add the beaten egg and massage for another 30 seconds. Let it marinate while you prepare the rest.
- Cut the bell peppers and onions into small triangles and the pineapple into bite-sized pieces.
- Whisk the ketchup, brown sugar, vinegar, cornstarch, salt and water together for 45 to 60 seconds.
- Add the flour to the marinated pork and massage for 1 to 2 minutes, adding dashes of water if needed to spread it evenly.
- Coat each piece of pork in cornstarch from a plate, squeezing each piece a few times to cover it.
- First fry: heat the corn oil, enough to submerge the pork, to 300 to 350ยฐF (149 to 176ยฐC). Carefully add the pork and fry for 7 to 8 minutes, squeezing it as you add it. Leave it alone for 1 to 2 minutes, then remove with a slotted spoon once it starts browning and crisping.
- Second fry: heat the oil to 400ยฐF (204ยฐC), fry the pork for 1 to 2 minutes, then remove with a slotted spoon.
- Pour off the oil, saving it. Add the chopped vegetables and cook for 30 seconds, then add the pineapple and cook for another 30 seconds. Remove the vegetables and pineapple from the wok.
- Add some corn oil to the wok and reduce the sauce for 1 to 2 minutes until it boils. Return the pork, vegetables and pineapple to the wok and toss with the sauce for 1 to 2 minutes. Serve immediately.
